Chicken Marsala
With Orecchiette, Mushrooms, Tomatoes, Herbs and Buttery Marsala Wine Sauce

- 4 oz. Grilled Chicken Breast, sliced
- Garlic
- Shallots
- Assorted Mushrooms, sliced
- Roma Tomatoes, diced
- Chopped Herbs
- Marsala Wine
- Butter
Heat a medium sauté pan with some butter, add the garlic and shallots, then the mushrooms, herbs, and chicken. Add the diced tomatoes, then marsala wine. Reduce the wine a little then add a big lump of butter. Toss in the pasta and season with salt and pepper. Garnish with chopped parsley.
Chef Notes: For more flavor, add a little chicken stock after the marsala wine.
