Shrimp Scampi Pizza
Sauteed Shrimp Scampi, Garlic, Shallots, and Mozzarella with Basil and Parmesan

- 1 ea. Dough Ball
- Garlic Virgin Oil
- Mozzarella Cheese
- Parmesan Cheese
- 9 ea. Shrimp
- Garlic
- Shallots
- White Wine
- Chopped Herbs
Open the dough by hand, cutting at least a half inch crust along the diameter of the dough ball. Spoon the garlic oil over the dough and top with mozzarella and parmesan cheese. Cook the crust. In a small saute pan, saute the shrimp with garlic, shallots, chopped herbs, and finish with wine and butter. Slice and then top the pizza with the shrimp, spooning the pan sauce over each shrimp. Brush the crust with garlic oil and garnish with chiffonade basil and parmesan cheese.
Chef Notes: Never assemble this pizza with raw shrimp. Always cook the scampi separately.
