Hudson Valley Smoked Duck Pizza
Smoked Duck Breast with Gorgonzola, Cabernet Poached Pears, Arugula, and Balsamic Syrup

- 1 ea. Dough Ball
- Garlic Virgin Oil
- Smoked Duck Breast, diced with the skin and fat on
- Gorgonzola Cheese
- Cabernet Poached Pears
- Arugula, dressed with raspberry vinaigrette
Open the dough by hand, cutting at least a half inch crust along the diameter of the dough ball. Spoon the garlic oil over the dough and top with gorgonzola, duck, and the pears. Brush the crust with garlic oil and garnish with dressed arugula and a spoon full of balsamic syrup drizzled over the entire dish.
Chef Notes: Place the dressed arugula on top of the pizza just before the server brings it to the table.
